Setting log locations for different definitions

I'm in the process of adding advanced logging for a couple of reasons. First we want to include the local time and date for ease of research when viewing the logs locally on the server. Second of all, we need to create a custom definition and save to a shared location so that our Devs can use AWstat to view the logs. I have a couple of general questions or issues.

1) When advanced logging is enabled does the default logging get disabled? It seems the old logs no logger get produced.

2) Can you not set up different definitions and have them log to different locations? It seems if I change the location for one they all get changed. If this is the case, boy would that be a nice enhancement. We really need to log them to two different locations.

3) When I change the location to a shared network location the log file is not produced. Is there any reason other then permission issues that would prevent that? The log location is set at both the high level server and at the website level.
